Cooking Steps
- 1Boil water in a large pot and cook the corn until the kernels are plump. If using canned corn, skip this step.
- 2Once the corn is cooked, let it cool. Then cut the kernels off the cob or drain the canned corn.
- 3In a large mixing bowl, combine corn, chopped tomatoes, red onion, cilantro, minced garlic, and lime juice.
- 4Add the lemon herb seasoning and salt. Taste and adjust seasoning if necessary.
- 5Serve immediately with tortilla chips or as a topping for tacos.
